
ROASTED BABY POTATOES

Cut the baby potatoes in half, coat them in mustard oil, turmeric + chilli + coriander powder & salt.
Roast in oven for 20-25 mins.
Meanwhile make the sauce.
Ingredients:
• 3 sambar onions, minced
• 2-3 sprigs curry leaves
• 1-2 green chillies
• 1-2 dried red chilli
• 1-1.5 tbsp black pepper powder
• 1 tbsp ginger garlic paste
• 2 tbsp 𝐒𝐭𝐢𝐫 𝐅𝐫𝐲 𝐊𝐨𝐣𝐢 𝐏𝐚𝐬𝐭𝐞
• 1 tsp Sweet Shiitake Essence
Heat oil, pop the curry leaves. Add in onions & the chillies, once soft add in the ginger garlic paste, black pepper. Let it cook for 1-2 mins and then add the Stir Fry Koji Paste & Sweet Shiitake Essence.
Stir well, add water to desired consistency and a tiny spoon of butter to finish it off.
Just tossed the roasted baby potatoes in this and finished it off with a powder made from curry leaves & lemongrass (optional)
This sauce works well for stir frying veggies such as mushrooms, okra etc too. Eat it with Roti, Paratha, in a Bao, Rice or Noodles.
