
MISO GINGER SPRING ONION SAUCE

ngredients:
• 2-3 bunches Spring Onion
• 1/2 inch Ginger minced
• 2.5 tbsp Sesame Oil
• 2 tbsp 𝐑𝐨𝐚𝐬𝐭𝐞𝐝 𝐂𝐚𝐬𝐡𝐞𝐰 𝐌𝐢𝐬𝐨 (can substitute with 𝐒𝐰𝐞𝐞𝐭 𝐂𝐡𝐢𝐜𝐤𝐩𝐞𝐚 𝐌𝐢𝐬𝐨 as well)
• 2 tbsp Mirin
• 2 tbsp Sake
• 1 tbsp 𝐓𝐫𝐚𝐝𝐢𝐭𝐢𝐨𝐧𝐚𝐥 𝐌𝐢𝐬𝐨 𝐁𝐥𝐞𝐧𝐝 𝐓𝐚𝐦𝐚𝐫𝐢
Finely chop spring onions.
Heat oil in a pan and add in the spring onions & ginger. Saute until wilted and add in the sake & mirin. Mix well and then add then mix the 𝐑𝐨𝐚𝐬𝐭𝐞𝐝 𝐂𝐚𝐬𝐡𝐞𝐰 𝐌𝐢𝐬𝐨 with 30ml warm water, add to the base. Let it simmer on med heat till desired thickness and then finish off with the 𝐓𝐫𝐚𝐝𝐢𝐭𝐢𝐨𝐧𝐚𝐥 𝐌𝐢𝐬𝐨 𝐁𝐥𝐞𝐧𝐝 𝐓𝐚𝐦𝐚𝐫𝐢

Here I used the sauce with the roasted baby potatoes I posted about the day before. You can add any seasoning you like, here I added some minced onion, curry leaves, green chillies and sauerkraut powder.
Great with eggs & steamed rice, dipping sauce for sweet potato fries, dressing for roasted pumpkin and so much more.
