AMAZAKE

It's a Japanese beverage or porridge that is made using Koji or Sake Lees. 

It can be alcoholic or non-alcoholic.

I prefer mine non-alcoholic personally and BKB Black/Purple Rice Amazake is made with keeping several uses in mind.

 

The ratio that works best for me is 

1:1:2 (Cooked starch : Ukade Koji : Water)

 

We ferment it at 55ºC for 14hrs before straining it. 

 

Why is it fermented at 55-60 ºC?

Because the above temp range is perfect and most suited for the enzymes within koji to breakdown the starches into simple sugars. 

 

To Blend or to Strain?

This is completely dependent on what your intention with it is. It can be enjoyed as a porridge for breakfast or as a warm drink in the winter evenings, or you can try it as we do. Strained till crystal clear, equal parts Amazake & neutral Komboucha and if it's the weekend spike it with a lil Gin.  

 

We don't really sell Amazake outside of Goa yet, however if you have tried our Vegan Oyster Sauce, this is the star and one of the main reasons for its delicious taste.
