At Brown Koji Boy, we’ve always believed that fermented food doesn’t need a rulebook — just curiosity. The Build Your Own Funk Box is our way of opening the door a little wider. No pressure, no expert-only products. Just good ferments, chosen by you, at your pace.
If you’re new to BKB, this is a gentle entry. If you’ve been around, this is a chance to mix, match and taste with intent.

Starter Boy
Soft, rounded, and familiar — these are misos that ease you in. Sweet chickpea miso, Cashew Miso, Shiro Miso, or Instant Miso for everyday comfort. Think warm bowls, quiet meals, and flavours that feel easy but still interesting.
Spicy Boy
For those who like a little heat with their depth. Our Spicy Chickpea Miso, King Chilli Miso, and Gochujang sit where fermentation meets fire. Layered, bold, and best used sparingly at first — then generously, once you know you’re hooked.
Umami Boy
Deep, dark, and slow-built. Hatcho Miso, Black Garlic Miso, and our Umami Butter are for when you want to taste fermentation in its fullest form. A spoon here can change an entire dish.
Why this box exists?
Ferments are best understood by cultivating your own palette — not all at once, not all the same way. The Funk Box lets you explore contrast: sweet to intense, mild to complex, fresh to aged. It’s how we taste in the lab, and how we recommend you do it at home.
